avocado & beet salad



I’m a big fan of vibrant, colourful salads. Simplicity is even nicer when you’re in a rush, which I seem to be all the time. A while ago I picked up Gwyneth Paltrow’s “It’s All Good” recipe book and every once and a while I get so inspired by the photographs of beautiful, natural foods that I have to give them a try.

This salad recipe was great – simply mix greens with avocado and steamed beets. The dressing calls for: 2 tablespoons pumpkin seed oil, 1 tablespoon sherry vinegar, coarse sea salt and ground pepper.

Tasty and quick, this recipe has been great for lunch and alongside BBQ dinners.
