This rich cake is perfect for your St. Patrick’s Day festivities and is one of my favourites to prepare for my Guinness-loving dad. It’s a fuss-free cake and I choose to keep it as low maintenance as possible, meaning no extra toppings or pops of colour. The cream cheese icing over the dark cake is meant to mimic the look of the foamy head atop a freshly poured pint. While I’ve used regular Guinness for this cake in the past, I opted for their new Black Lager this time and was pleased with the results.
While spring is arriving in much of the country, in the Northwest Territories there is no shortage of snow and -30 degree weather. Throwing in some spring flowers for the illusion of spring sure helps though!
