In northern Canada the summer and gardening season is very short and very busy. With everyone trying to squeeze every bit of sunshine out of the season there is no end to BBQs, patio potlucks and outdoor parties. It’s an excellent excuse to bake garden-themed desserts.
This was one of my favourite mid-summer cakes. I’m not too fussy about the baking process (usually I’m dreaming up how I’ll decorate before the batter is even in the oven). It is a double layered coconut cake rolled in toasted coconut.
For decorating, I simply washed and cut some vibrant tulips and stood them up in the icing. It was a simple cake to make but would look stunning at a bridal shower or garden party. Slip it onto a pretty platter for extra appeal.
